Just really fascinating problems that made academia seem practical.\"<\/span><\/p><p><span style=\"font-weight: 400;\">But it was when Philip stumbled <\/span><a href=\"https:\/\/pubsonline.informs.org\/doi\/abs\/10.1287\/inte.28.1.75\"><span style=\"font-weight: 400;\">upon a paper from Taco Bell<\/span><\/a><span style=\"font-weight: 400;\"> that he was exposed to operations research in restaurants. \"The paper was old. It was from the 90's. But it discussed models for queuing and how opening and closing registers would impact.
